Refrigeration makes bread stale faster.

When bread is stored in a cold environment (but above freezing), re-crystallization begins and staling happens much faster than at room temperature. Freezing, however, dramatically slows this process down. Bottom line – if you are not going to eat all of your artisan bread within 2 days, it is best to wrap it in plastic and freeze it.
